Strawberry Spinach Salad: Easy + Homemade Strawberry Vinaigrette

Today I’m joining my blogging buddies to bring strawberry recipe inspiration your way! I’m sharing a fun recipe for spring + summer: strawberry spinach salad with easy + homemade strawberry vinaigrette. This recipe is so easy to put together and only requires a few ingredients. The homemade strawberry vinaigrette is super easy to whip up. Only 4 ingredients are necessary! It’s to die for and I can’t wait for you to give it a try!

Strawberry Salad Ingredients

  • Spinach
  • Gorgonzola (crumbled)
  • Strawberries
  • Pecans (candied or honey toasted)
  • Olive Oil
  • Orange Muscat Champagne Vinegar from Trader Joe’s
  • Orange rind
  • Salt

 

Strawberries + Spinach

When I think of spring and summer I think of fresh and yummy salads. I love coming up with fun salad combos! This one is so perfect for entertaining or for serving poolside. It’s light, super delicious and healthy! This strawberry spinach salad is also very easy to make and is very portable for summer picnics and potlucks.

I love using my strawberry stem remover – it makes slicing strawberries so easy!

This is the perfect salad when entertaining. It’s not only delicious but pretty as well – look at that pink vinaigrette!

Easy + Homemade Strawberry Vinaigrette

I was recently inspired while shopping at Trader Joe’s to whip up my own strawberry vinaigrette version with their Orange Muscat Champagne Vinegar. Using this vinegar combo saves time when making this strawberry vinaigrette. I simply tossed strawberries into the blender with the orange muscat champagne vinegar along with olive oil and a dash of salt to make easy + homemade strawberry vinaigrette.

 

To bring out the orange citrus flavor in the vinaigrette I added a little bit of orange rind. It added that little extra and made it super tasty!

Strawberry Spinach Salad: Easy + Homemade Strawberry Vinaigrette

Spinach salad with gorgonzola, candied or honey nut roasted pecans and homemade strawberry vinaigrette.

Ingredients
  

  • 1 Bag of Spinach
  • 1 1/2 cups Honey Toasted Pecans or Candied Pecans
  • 2 pints Strawberries
  • 1 Crumbled Gorgonzola Cheese
  • 1/4 cup Extra Virgin Olive Oil
  • Dash Salt
  • 1 bottle Orange Muscat Champagne Vinaigrette

Instructions
 

  • Combine 1 pint of strawberries, 1 bottle of orange muscat champagne vinaigrette, a dash of salt and 1/4 cup of extra virgin olive oil in blender. Blend until liquified. You can add more olive oil depending on how much of a vinegar taste you prefer with your salad dressing.
  • Combine spinach, crumbled gorgonzola cheese, and honey nut or candied pecans.
  • Thinly slice 1 pint of strawberries and place over the top of the salad.
  • Top with strawberry vinaigrette.
  • Add grilled chicken if desired.

Notes

If you don't have access to a Trader Joe's for this Orange Muscat Champagne Vinaigrette you can combine white vinegar, freshly squeezed orange juice, olive oil + a little balsamic vinegar, dash of salt and strawberries in the blender for a similar flavor.
