Today I’m sharing my new copper slow cooker + recipe for fall!

Fall is almost here and it’s time for all the homemade, good for your soul cooking. Whether your kids are going back to school in person or logging on virtually it’s always super convenient to let a slow cooker do all the work of getting dinner ready for you and your family. This gives you time to work, get errands done and also be present with your child while they learn virtually.

I use my slow cooker frequently – especially during the fall months. I was in major need of a new slow cooker and after doing my research I found the perfect one. The copper color of this slow cooker from The Home Depot totally caught my eye.

Meatless Zuppa Toscana Slow Cooker

A spin on the popular Zuppa Toscana. You can make this delicious soup without meat or add a variety of different options like lentils. If you are craving a healthier meat opt for cooked chicken sausage sliced or chicken meatballs.

Cook Time 5 hours 30 minutes

Equipment

  • Slow Cooker

Ingredients
  

  • 5 Gloves of Garlic minced
  • 32 oz Chicken Broth
  • 16 oz Water
  • 1 tsp Salt
  • 1/2 White Onion (add more onion if you like onions)
  • 1.5 Potato (add more potato if you like potatoes)
  • 5 cups Kale, Spinach + Super Greens mix
  • 1/3 cup Heavy Cream
  • Parmesan Cheese

Instructions
 

  • Mince garlic
  • Dice white onion
  • Slice Potatoes thinly into small chunks (keep skin on)
  • Add garlic, onion & potatoes to slow cooker
  • Add chicken broth + water to slow cooker
  • Cook via slow cooker on low for 5 hours
  • Add greens + heavy cream last and simmer for 30 min.
  • Top with parmesan cheese and serve with garlic bread. Add red pepper flakes for a little kick.
  • Craving meat with your soup – choose a healthier meat: cooked chicken sausage/sliced or chicken meatballs.
