Meatless Zuppa Toscana Slow Cooker

A spin on the popular Zuppa Toscana. You can make this delicious soup without meat or add a variety of different options like lentils. If you are craving a healthier meat opt for cooked chicken sausage sliced or chicken meatballs.

- 5 Gloves of Garlic minced
- 32 oz Chicken Broth
- 16 oz Water
- 1 tsp Salt
- 1/2 White Onion (add more onion if you like onions)
- 1.5 Potato (add more potato if you like potatoes)
- 5 cups Kale, Spinach + Super Greens mix
- 1/3 cup Heavy Cream
- Parmesan Cheese
Mince garlic
Dice white onion
Slice Potatoes thinly into small chunks (keep skin on)
Add garlic, onion & potatoes to slow cooker
Add chicken broth + water to slow cooker
Cook via slow cooker on low for 5 hours
Add greens + heavy cream last and simmer for 30 min.
Top with parmesan cheese and serve with garlic bread. Add red pepper flakes for a little kick.
