Creative Ideas for Weeknight Meals

Thinking outside the box when meal planning is very helpful. It allows you to think of new ideas and an opportunity to incorporate unexpected options. For example, this week I added a breakfast for dinner option. This is always a hit with the kids and allows you to grab whatever you have in your fridge – most of us have eggs on hand. Think about putting together a quick egg scramble or homemade pancakes with a side of fruit. This week’s meal idea for Monday: {Spinach Salad with Goat Cheese + Strawberry Dressing} is easy to whip together and a great meatless Monday option. I’ll be sharing the detailed recipe on my IG stories and later this week on the blog.

Adding Shortcuts for Weeknight Meals

When time is at a premium and you want to get dinner on the table you can make some shortcuts. Frozen veggies, a cooked rotisserie chicken from your local grocery store, and pre-made sides are perfect examples. For this week’s meal idea – {Easy Enchiladas} you can use a rotisserie chicken for the enchiladas – this saves you time! There are so many options today and you can find healthy ones. Try to find the balance of eating homemade food and prepared more processed foods.

This red lentil past meal I made last week includes some pre-made options but remains mostly healthy. It can be made vegetarian and the pasta is gluten-free. Add Crumbled bacon and goat cheese for a little extra, extra. I added a little olive tapenade to mine. All you have to do is boil the pasta and combine the ingredients with a little olive oil your toppings and voila! Dinner is done 🙂
