Meatless Zuppa Toscana Slow Cooker

A spin on the popular Zuppa Toscana. You can make this delicious soup without meat or add a variety of different options like lentils. If you are craving a healthier meat opt for cooked chicken sausage sliced or chicken meatballs.

Ingredients
  

  • 5 Gloves of Garlic minced
  • 32 oz Chicken Broth
  • 16 oz Water
  • 1 tsp Salt
  • 1/2 White Onion (add more onion if you like onions)
  • 1.5 Potato (add more potato if you like potatoes)
  • 5 cups Kale, Spinach + Super Greens mix
  • 1/3 cup Heavy Cream
  • Parmesan Cheese

Method
 

  1. Mince garlic
  2. Dice white onion
  3. Slice Potatoes thinly into small chunks (keep skin on)
  4. Add garlic, onion & potatoes to slow cooker
  5. Add chicken broth + water to slow cooker
  6. Cook via slow cooker on low for 5 hours
  7. Add greens + heavy cream last and simmer for 30 min.
  8. Top with parmesan cheese and serve with garlic bread. Add red pepper flakes for a little kick.
