Place sliced bread onto a cookie sheet and place in the oven until lightly toasted
Remove sliced bread from oven and rub with a garlic clove
Set bread aside and prepare topping
Clean and dice Roma tomatoes
In a bowl combine a pinch of salt, olive oil and diced fresh parsley to tomatoes
Mixture tomato and olive oil topping and set aside
Spread cheese over each piece of toasted bread
Top with a small amount of tomato mixture
Serve immediately
